Fiskarsin Panimo (entinen Rekolan Panimo) on perustettu 2011 maukkaiden ja erilaisten oluiden valmistamiseksi. Fiskarsin Panimo keskittyy oluen makuun ja ruokien makumaailmojen yhdistämiseen.

Aina perusperiaatteena on ollut oluen juotavuus, myös ihan sellaisenaan nautittuna. Makumaailmoja haetaan överihumaloinnin sijaan mallaspohjasta, erikoisista hiivoista, jotka tuottavatkin huikeita makuyhdistelmiä sekä tietenkin maanläheisestä maustamisesta, kuten kuusenkerkän käyttämisestä oluessa. [1]

Fiskarsin Panimo oli aiemmin Rekolan Panimo. Toimitusjohtaja kertoo: “Panimon juuret ovat edelleen Rekolassa, mutta puu on kasvanut eri suuntaan. Olemme kotiutuneet Fiskarsin idylliseen ruukkiin ja nimenvaihdosta on toivottu jo pitkään, monelta suunnalta. Samalla muutetaan oluiden pullokoko 0,5L pullosta 0,33L pulloon, mikä on asiakkaiden ja yhteistyökumppaneiden toiveista lähtenyt muutos”. [2]

We ended up brewing a robust Barley Wine, which gets its twist from 50 birch whisks infused into the mash water as well as birch sap. A dark, sweet tone is brought by muscovado sugar and as hops we selected Citra, Centennial and Galaxy. The birch whisks were put to good re-use later that night in the sauna!

The brewed beer matures for several months in oak barrels, where a cavalcade of different yeasts and bacteria are allowed to shape the beer in peace, with natural processes playing a major role. Each barrel matures in its own direction and is unique - from these barrels, the right ones are carefully selected for blending Lampi. Lampi tuotetaan sekakäymisprosessimme kautta. Lampin tapauksessa valmistuva olut kypsyy useita kuukausia tammitynnyreissä, joissa eri hiivat ja bakteerit saavat muovata olutta rauhassa luonnollisten prosessien näytellessä pääroolia. Jokainen tynnyri kypsyy omaan suuntaansa ja näistä tynnyreistä valitaan huolella parhaat Lampin blendausta varten.

Many smoked beers were enjoyed, particularly those of Brauerei Spezial. On our return we brewed up a suprisingly easy drinking smoked lager (considering that 95% of this beer's malt bill is Bavarian beechwood smoked!). Classic Mittelfrüh and Tettnanger hop varieties help to balance the beer and add a little spice. Unfiltered, bottom fermented lager.
